A Very Lemony Lemon Loaf

Step 1

Leave butter on countertop to soften before baking

Pre-heat oven to 180°C and line the loaf tin with the greaseproof paper provided

Step 2

In a large bowl add the softened butter and sugar and cream together with a metal fork/whisk/electric whisk/standing mixer unto light and fluffy

Step 3

If using a standing mixer, mix on low whilst adding the eggs but if doing by hand add in the eggs one at a time and whisk after each addition

Step 4

Using the small side of a grater, grate the skin of 2 lemons and add 3/4 of the zest to the batter, leave the rest of the zest to the side for later

Step 5

Using a chopping board and a sharp knife cut one lemon in half and squeeze out the juice of the whole lemon by hand into a small bowl/ use a lemon squeezer and add 2tbsp to the batter (don’t get pips into the batter!)

Mix until the lemon juice is combined into the batter

Step 6

Add the dry ingredients and whisk until just combined

Step 7

Pour the cake batter into the prepared tin (a silicone spatula can help get all the batter out) and bake, in the centre of the oven, for 30-35 minutes/ golden brown or until the cocktail stick comes out clean

Step 8

Whilst the cake is baking cut the second lemon in half and squeeze out the juice into the same small bowl with the lefotver lemon juice

In another small bowl add 2 tbsp of lemon juice and the granualted sugar, mix until combined and leave to the side until the cake is baked

Step 9

Once the cake is baked, remove from the oven and place tin to cool on the cooling rack

Poke holes into the cake all over with the cocktail stick – don’t touch the bottom of the tin – and once done pour over the lemon and sugar drizzle

Step 10

Leave the cake to completely cool on the cooling rack

Step 11

Make the lemon drizzle icing by sieving the icing sugar into another small bowl and add 2tsp of lemon juice/more if leftover and desired – you want a thick runny consistency that will pour off a spoon

Drizzle the lemon icing on the cake as you like and use the remaining lemon zest to sprinkle over the top
