Apple and Blackberry Traybake

Step 1

Place the butter on the countertop to soften before baking

Prepare ? inch tin by lightly greasing and lining with greaseproof paper

Step 2

In a large bowl add all the ingredients except the fruit, and whisk with a fork/whisk/standing mixer until well combined (if you’re nervous about gettin egg shells in the mix crack first into a small bowl and then add)

Step 3

Peel the apple and cut into small pieces using a chopping board and a sharp knife, add to the cake batter with the blackberries and fold in

Step 4

Pour the batter into the preapred tin and bake for 30 – 35 minutes until golden brown and the toothpick comes out clean

Step 5

Once baked remove from oven and allow to cool, in the tin for 10 minutes, on a cooling rack

After around 10 minutes run a knife around the outside of the tin and remove the cake and allow to cool completely on the cooling rack
