Step 1

Pre-heat the oven to 180°C (fan) and line the loaf tin with the greaseproof paper provided

Step 2

In a large bowl add the sugar, oil and vanilla and whisk to combine

Step 3

Add the eggs one at a time to the oil/sugar mixture and whisk

Step 4

Pour dry ingredients, from the second brown paper bag, into the large bowl with the wet ingredients and whisk until just combined

Step 5

Peel the apples and then using a chopping board and a sharp knife cut around the core, and cut the apple into small chunks – about the size of sweetcorn kernels

Step 6

Fold the apple chunks into the cake batter – the batter should be lumpy and thick but it will still fall out the bowl

Step 7

Pour the batter into the prepared tin and bake, in the centre of the oven, for 45 minutes or until the cocktail stick comes out clean

Step 8

Once baked take out of oven and allow to cool completely in the tin on a cooling rack

Step 9

Once cooled remove the cake from the tin and enjoy!
