Creamy Carrot Cake

Step 1

Leave out butter for frosting to soften on countertop

Pre-heat oven to 180°C and line two 8×8″ cake tins with the greaseproof paper provided

Step 2

In a large bowl add oil and sugars and mix until combined

Step 3

Crack the eggs one at a time into the oil/sugar mixture, whisking after each addition

Step 4

Pour in the flour mix in 3 parts into the wet mixture and combine with a spatula or spoon, scraping down the side, until batter is smooth

Step 5

Using a chopping board and a sharp knife chop off the end of the carrots, peel and grate on large side of grater

Step 6

Add grated carrot to cake batter along with sultanas if selected and mix in

If walnuts selected as an additional ingredient, chop and add to batter too

Step 7

Once all is combined, pour the batter evenly into the tins (for exactness use scales to equally weigh around 600g-700g of batter into each tin, but don’t include the weight of the tin)

Step 8

Bake for 35 – 40 minutes, in the centre of the oven, or until the cocktail stick comes out clean

Step 9

Remove cakes from oven and allow to cool on cooling rack for around 20 minutes

Step 10

Make the buttercream by first adding softened butter to a medium bowl and beat until smooth and creamy

Next sieve in the icing sugar (and cinnamon if selected) and beat until just combined

Add 2 tbsp of tap water to the milk powder, stir, and add slowly to the buttercream (you may not need all of it) along with the vanilla extract and mix

Step 11

Once cakes are cool to touch, take out of the tins (run a blunt knife around the edges) and cool again if still warm

Step 12

If needed level out one cake layer with a bread knife (taste test the cut offs!) – this will be the bottom layer of the cake

Step 13

Use half of the buttercream to frost the flat layer of cake, then add the second layer on top and frost with a blunt knife/spoon

Step 14

If applicable, decorate the cake with any add ons selected at purchase
