Dark Chocolate Orange Truffles

Step 1

Preapare a baking tray/plate with greaseproof paper

Step 2

Using the large side of a grater remove the rind of one orange

Using the small side of a grater remove the rind of the other orange and leave to one side

Step 3

Pour cream into a small saucepan and add inn large grated orange rind peices and heat over low-medium high heat

Simmer until bubbles appear around the sides of the saucepan

Step 4

Once small bubbles appear take the saucepan off the heat and let the cream sit for 30 minutes to infuse citrus

Step 5

Melt 2nd bag of chocolate in a small microwave

Step 6

Place bag 1 of chocolate (8oz) into a large microwaveable bowl and microwave in 15 second bursts until melted – stir each time you check

Step 7

Once cream has cooled and infused for 30 minutes return saucepan to heat briefly (stir and allow to warm) and then pour through sieve into the melted chocolate)

Step 8

Stir mixture and add in the finely grated rind from earlier

Leave to cool to room temperature

Step 9

Once cooled place in the fridge for 2-3 hours

Step 10

When firm enough to roll into balls remove from fridge

Dust hands with cocoa and and shape truffles by rolling into small bite sized balls

If you have time/ it is a warm day place truffles back in the fridge to chill – if no time skip chilling

Melt 2nd bag of chocolte in a microwaveable bowl and microwave in 15 seconds bursts, stir, until melted

Step 12

Messy part! Coat truffles in the melted chocolate using spoons/tongs, allow excess chocolate to drop off before dusitng with cocoa powder and placing back on plate/tray

Step 13

Once truffles are all coated in chocolate and sprinkled with cocoa powder, chill in fridge and take out when you want a bite!
