Gluten Free Super Fudgy Brownies

Step 1

Pre-heat oven to 180°C and line a 8×8″ tin with the greaseproof paper provided

Step 2

In a medium/large microwaveable bowl melt butter and 175g of chocolate in 20 second bursts until smooth and runny

If peanut butter selected melt 2/3 of it with chocolate and butter too, if not skip to Step 3

Step 3

Add sugar to the melted chocolate and butter bowl and mix until smooth

Step 4

Add vanilla and eggs into the brownie batter and mix

Step 5

Add the dry igredients and mix until just combined

Step 6

Using a chopping board and sharp knife carefully cut the remaining chocolate into small chunks as well as any nuts if selected

Use half of these chunks by folding them into the brownie batter (save the other half for the next step)

Step 7

Pour/spoon out the batter (a silicone spatula will help get all the batter out) into the prepared tin evenly and sprinkle with the rest of the chocolate chunks

If peanut butter selected melt the leftover third in the microwave for 15 seconds or so, and drizzle over brownie

Step 8

Bake, in the centre of the oven, for 20-25 minutes or until the cocktail stick comes out with a few moist crumbs (bake a few minutes longer if you like a firm brownie)

Step 9

Once baked remove from oven, leave in tin and cool on cooling rack and immediately sprinkle with a little sea salt for an amazing sweet-salty combo

Allow to cool before cutting
