Step 1

Pre-heat oven to 180°C and line 2 x 8″ tins with the greaseproof paper provided

Allow butter for buttercream frosting to soften on the countertop

Step 2

Add the bag of dry cake ingredients to a large bowl

Step 3

To make milk pour the milk powder into a cup and add 14 tbsp/210ml of tap water, mix and use 10tbsp/150ml of this and add this to the dry ingredients and mix

Leave the remaining milk to one side for the buttercream

Step 4

Next add the vegetable oil and vanilla to the large bowl and whisk until smooth

Step 5

Crack the eggs into the mixture and whisk until it looks rich and thick

Step 6

Boil some water and once boiled carefully pour to measure 160ml and add to mixture gradually, whisking in between additions (electric whisk on high for 1 minute to add air, if by hand whip like crazy, but carefully, to get some bubbles in the mixture)

Don’t worry that the mixture is watery and thin – this is supposed to happen!

Step 7

Pour batter evenly into the tins (for exactness place tins on weighing scales, press the on button and pour around 455g of cake batter into each tin)

Step 8

Bake in the center of the oven for 20-27 minutes/ until the cocktail stick is inserted and comes out clean

Step 9

Remove from oven and cool in tins, on a cooling rack, for 20 mins

Once cooled run a knife around the edges of the tin to release the cakes and allow to cool completely on rack

Step 10

Make buttercream by sieving icing sugar (and cocoa if applicable) into a medium size bowl, add softened butter and beat by hand with metal fork/ electric whisk until fluffy and creamy – about 3 mins

Once beaten, add vanilla and the 2-3tbsp of the remaining milk and mix
If chocolate or vanilla buttercream selected skip to Step 11

For peanut buttercream, add peanut butter to butter icing (and a little more milk if needed) and mix

Step 11

Level out one of the cooled cake layers with a bread knife (have a taste!) and spread half of the buttercream evenly on top, add the next cake layer and then use the rest of the buttercream to frost the top

If toppings were selected decorate how you like!
