Ooey Gooey Chewy Brownies

Step 1

Pre-heat oven to 160°C and line an 8×8″ tin with the greaseproof paper provided

Step 2

In a medium/large microwaveable bowl melt butter and sugar until smooth and runny in 20 second bursts (around 1 min, keep checking and stirring occasionally)

Once melted remove from microwave, stir and then allow to cool for 5-10 minutes

Step 3

Whilst cooling, use a chopping board and a sharp knife to cut the chocolate into small chunks

If nuts selected, cut into chunks too

Step 4

Once butter/sugar is cooled mix in cocoa powder

Step 5

Add eggs one at a time to the cooled mixture and whisk

Step 6

Slowly add the dry ingredients into the wet mixture and combine

Step 7

Fold in all the chocolate chunks and/or nuts into the brownie batter or reserve some to sprinkle on the top if desired

Step 8

Pour/ scoop out batter into the prepared tin (a silicone spatula can help to get all the batter out)

Sprinkle with chocolate chunks/nut pieces/Smarties if reserved/chosen

Step 9

Bake, in the centre of the oven, for 20-25 minutes or until a skewer comes out with just a few moist crumbs/ until you reach your preferred consistency (more gooey at 20 minutes)

Step 10

Remove from oven once baked and allow to cool, in the tin, on a cooling rack for 20 minutes

If Rolo’s selected push them gently onto the top of the hot brownies and allow to cool

Step 11

After 20 minutes take the brownies out the tin, either cool some more or have a square whilst they are still warm!
