Scrumptious Shortbread

Step 1

Line baking tray wtih greaseproof paper

Step 2

Cream sugar and butter in large bowl and add in flour gradually until a smooth dough forms
If chocolate chips selected as an additional ingredient add to dough as well
Squidge dough together to form a ball

Step 3

Lightly flour surface of worktop and use rolling pin to roll out dough to 1/2 inch thickness

Step 4

Either cut out with sharp knife to form rectangles/ finger shapes or use cookie cutters
Optional – prick finger shaped dough (if made) lighlt with a fork for traditional shortbread look
Sprinkle with sugar

Step 5

Place cut out dough on baking sheet, 1 inch apart, and chill in fridge for 20 minutes (if you don’t have time go straight to baking)

Step 6

Pre-heat oven to 180°C

Step 7

Once chilled place tray in pre-heated oven and bake for 12 minutes until lightly golden brown in colour

Step 8

Once baked, remove tray from oven and move cookies onto a cooling rack to cool completely

Step 9

If chocolate selected for topping – melt chocoalte in microwave safe bowl in the microwave in 15 second bursts until melted
Dip half of the cooled shortbread biscuit into chocolate and allow to set
