Step 1

Pre-heat oven to 180°C and line your 12 hole muffin tray with the cupcake cases provided

Allow butter for the buttercream to soften

Step 2

Add the bag of dry cake ingredients to a large bowl

Step 3

To make milk pour the milk powder into a cup and add 125ml of tap water, mix and use 7 tbsp/110ml of this and add this to the dry ingredients and mix

Leave the remaining milk to one side for the buttercream

Step 4

Next add the vegetable oil and vanilla to the large bowl and whisk until smooth

Step 5

Crack the eggs into the mixture and whisk until it looks rich and thick

Step 6

Boil some water and once boiled carefully pour to measure 105ml and add to mixture gradually, whisking in between additions (electric whisk on high for 1 minute to add air, if by hand whip like crazy, but carefully, to get some bubbles in the mixture)

Don’t worry that the mixture is watery and thin – this is supposed to happen!

Step 7

Pour batter into a jug (makes pouring into cases easier) or use a spoon and scoop out batter to fill the cupcake cases up to 3/4 full, or until all 12 cases are evenly filled

Step 8

Bake in the centre of the oven for 13-15 mins minutes/until the cocktail stick is inserted and comes out clean

Step 9

Remove from oven and carefully lift the cases away from the tin and place on cooling rack to cool for 45 mins

Step 10

Make buttercream by sieving the icing sugar into a medium size bowl, add softened butter and beat by hand with metal fork/ electric whisk until fluffy and creamy – about 3 mins

Step 11

Once beaten, add vanilla and food colouring as well as the remaining milk and mix

Step 12

Once icing is all evenly coloured and smooth, frost cooled cupcakes with a spoon/knife, or pipe with a piping bag

Step 13

Decorate how you want with the 6 chocolate hearts and love heart sweets
